Largely underappreciated, grass fed lamb is a flavorful and healthy meat that provides beneficial fats, protein and minerals like selenium and zinc.

A staple of the Mediterranean diet, grass fed lamb with its high level of healthy fats is an excellent choice for those following a ketogenic or weight reduction diet. About 40% of its fat comes from oleic acid, a monounsaturated fat (much like extra-virgin olive oil). Grass fed lamb, compared to conventionally raised lamb, is also a good source of omega-3 fats.

Delivered directly to you frozen, the Whole Leg of Lamb should be kept frozen for long-term storage. Once thawed, it may be stored for three to five days in the refrigerator.

Roasting a leg of lamb is simple to do. Because the meat is naturally tender, no marinating is required. We recommend rubbing the meat with olive oil, minced fresh garlic, Himalayan salt, and dried or fresh rosemary and thyme before roasting.

To roast, place lamb in a roasting pan, fatty side up. Bake in preheated 450°F oven for 30 minutes, then continue roasting at 325°F until internal meat thermometer reaches 130°F for medium rare or 140°F for medium-doneness.
